This young cheese is made out of pasteurized goat’s milk and has a fresh, creamy taste with an acidity that can seem lemony, along with something nutty and fresh hay. It is covered with ash to facilitate the development of mold, this cheese ripens in a well-ventilated room at 80% humidity. It matures for 3 weeks before it is ready to eat.
