Ossau Iraty, a pasteurized sheep’s milk cheese that has been aged for 90 days is produced in south-western France, in the Northern Basque Country and in Béarn, it is one of only two sheep’s milk cheeses granted PDO (AOC) status in France. A firm cheese that is smooth and creamy. Istara has a smooth, slightly buttery texture with a wonderfully sweet flavor with hints of hazelnut, olive and fig.
