Pecorino Camomilla is an Italian cheese made with pasteurized sheep’s milk. It is produced in May and June when the sheep graze on the best grass covered with chamomile flowers and kept in wooden crates covered with fresh cut camomile to preserve it as it ages for 2 months. The wheels are stored under the arches in the afternoon heat and then placed in a cool pantry in the evening. This keeps the cheese soft, creamy and gives it an intense floral aroma.
